11/10/19 We Love Quiche

Quiche for Dinner tonight!  This quiche sported broccoli, grape tomatoes, and ham. I used my new deep dish metal pie pan. Reading a King Arthur Flour article about pie baking and how to have a browner crust, a metal pan is suggested. My bottom crust was not much browner than glass.

Turner Street Market held an Open House on 11/18.We all worked together to prepare and present sides and desserts for order for Thanksgiving Dinner. I prepared Apple Crisp Cheesecake and Down East Lemon Pie. Also on this same day,  I baked 5 Pecan Pies for the Beaufort Historical Association Thanksgiving Feast.

We had no idea how many may come to the Open House, but the house was packed!! A wine tasting also helped brighten the assembled group!!

Well, it is time for me to have my Thursday night bridge group over and to show off some of my baking skills. Fall and Winter is usually a time to have heavy desserts such as Apple Cake, Carrot Cake, or Pumpkin anything. I have been hankering for Upside Down Pineapple Cake and decided to make individual servings using silicone bombe molds. The cakes turned out so well and I plated them and served with whipped cream.

One attendee commented the cakes looked just liked boobs. What do you think??

Carrot Cake baked in loaves and cupcakes if a favorite of our customers. With lots of carrots, coconut, and pineapple, this Carrot Cake version is delicious and moist.

The Key Lime Pound Cakes were baked on 11/12 and frozen when cooled. The frozen cakes are iced Lime Cream Cheese Frosting.and garnished with lime zest. The zested limes are then used to make Limeades.

Today, I am restocking Brownies and Key Lime Pound Cake for the freezer. Our stock is frequently baked in bucked and thawed as needed.

Our Brownies contain the double chocolate combination of cocoa powder and chocolate chips. Yummy!  Using 2 half sheets pans rather than one full helps to preventing over browning on the edges and shortens baking time. Extending the parchment paper above the edge aids in depanning for slicing. Slicing baked products on sheets can damage pans. A better solution would be to depan and cut on a cutting board. The half sheet size is a better fit on a cutting board.

Key Lime anything is a favorite of our Beaufort Farmer's Market customers. We being Key Lime Pound Cake to each Farmer's Market. We use Nellie and Joe's Key Lime juice in our cakes. We like to bake as much as possible from scratch. But, as most bakers know, juicing key limes is a tiresome task. Very little juice comes out of a lime.

In the Turner Street Market today I am preparing Banana Pudding Cookies for the freezer and baking Sunshine Bars.

Banana Pudding Cookies is an unusual combination of cookie ingredients with banana pudding mix and vanilla wafers added. A cookie within a cookie! To guarantee cookie freshness for the consumer, the dough is formed in a ball shape and frozen. Then, we bake off as needed. Shaping cookie dough in a ball shape and freezing is a great way for the cookie to have an even plump shape.

A variation of Lemon Bars is the Turner Street Market Sunshine Bars. Paying homage to the Sunshine State, 3 types of citrus fruits are zested for our version of the beloved bar.

Turner Street Market is located in downtown Beaufort. Open 7 days a week, we offer Breakfast, Lunch, and Dinner. For my Work Based Learning experience, I have been baking here since September.

Today I tackled their signature biscuit with wonderful results. There biscuit version is square, quite big, and rustic in appearance.

7/22/19 Pull Apart Bread

Convenience baking, using freezer dough. It is last minute again and I purchased frozen rolls and followed the recipe on the bag to produce this fabulous Pull Apart Bread or Monkey Bread for my Prayer Breakfast group!

My first attempt at Beignets turned out fairly well. The size of each is inconsistent and I will try again to improve. Messy to eat but worth it!!

7/14/19 Garden Pollinators

We have been having problems with a lack of pollinators in our backyard garden. This year we planted flowers at attack bees and butterflies. Zinnias have been our fave flower and we have had fresh flowers in the house all summer.

Tomato Quiche using tomatoes from our garden! Threw in a few squash too!

6/1719 Donut Holes

Using a recipe from The Biltmore Stable Cafe, I prepared donut holes for the Prayer Breakfast group. So easy, the dough is prepared and cut into small circles. The cut dough can be refrigerated for several days. The cut dough was fried in 350 degree oil, then drained, and glazed.
