An amazing class today! We prepared Opera Tortes. The different components tasks were divided among the students. I prepared Ganache and Coffee Simple Syrup. Others prepared Jaconde and Coffee Pastry Cream.

Our class prepared Cream Puffs today. They were wonderful. The components for this confection were Choux Pastry, Diplomat Cream, and Hard Caramel Sauce.

Beaufort Wine and Food is a fundraising group benefiting local charities and causes. They have pledged $100,000 for the new culinary school and these funds will help fit out our new facility. Occasionally, they will ask for volunteers to help stage various event.  I volunteered to help and went early in the morning to assist with set up for the day. It was a pleasure to work with the volunteers from this group. $15,000 was raised and donated to the Carteret County Public Schools Foundation to benefit teachers and students misplaced from Hurricane Florence.

Hurricane Florence devastated our county and we were out of school for 2 weeks. While the faculty was cleaning and reprogramming, the Culinary School treated them to lunch each day!!

During Petit Fours Class, we received our first assignment to practice piping. The class prepared gel to pipe on a template. We also practiced making parchment paper piping bags.

To open our Cakes and Tortes class, we begin with a basic sponge cake. We employ a Warm Foaming Method for this cake. Notice the sponge like appearance of this cake.

8/20/18 It's Back to School Day
 This semester at CCC I am taking Petit Fours and Pastries and European Cakes and Tortes
My first class in Petit Fours and Pastries we prepared Key Lime Mignardise.  This was an easy recipe to follow without difficult techniques. But, the slicing of the squares was exacting to produce an acceptable mignardise.

5/20/18 Chocolate Croissants

5/20/28 Time for a challenge and to practice skills. Laminated doughs can be difficult but so worth the effort for the end result. Using a recipe from our Baking textbook, I prepared the dough and followed the techniques learn in Artisan Breads class. The Monday Morning Prayer group loved these pastries.
